white bean-kale soup

Ingredients:

1 14-oz. can white bean, I used navy beans

1 bunch kale

1 box organic chicken broth, about 4 cups

1 large link spicy Italian sausage

1/2 tsp onion powder

3/4 tsp Ethiopian spice blend (paprika, red pepper, salt, ginger, onion, garlic, cardamom, allspice, cloves)

1/4 tsp chipotle chili pepper or smoked paprika

1 tsp salt

2 cups water

Process:

Brown link sausage in a skillet. Remove from skillet and cut into 1 inch pieces. Pull kale leaves off of stems and rinse. Rinse beans in colander. Add sausage, beans, kale and spices in Instant Pot. Add broth and water. Cook on high pressure for 6 min. After cooking is complete, release pressure valve and allow Instant pot to equilibrate.

You can make this in a regular soup pot; it will just need to be simmered for 15-20 min instead of the 6 min it takes in the instant pot.

Folks, a note about spice mixes. For dishes like soups and stews, or rubs for meat, the spice mix I use is not a make-or-break feature of the recipe. While I feel strongly that the use of some kind of spice is essential to the palatability of the dish, the specific spice mixture can be altered. The Ethiopian spice mix I used in this recipe was a gift from a friend. But you can simulate this taste with a mix of paprika, salt, ginger, allspice, cloves and cayenne pepper. I list these because most folks have these in their spice rack.

Another note: The link of spicy Italian sausage was purchased at Whole Foods. I love their sausage. You can make this soup vegetarian by omitting this and adding more beans or you can make it with another type of sausage or Bratwurst. Don’t fret about what type of sausage. My fam just likes SPICY. You can add more if you want a meaty version of this. I recommend at least 1 link to feed 2 people.
