sweet n’heat salsa
Everyone loves salsa. The traditional version involves tomatoes and cilantro, but for a different twist, or fo those who hate cilantro like my friend Michelle, here is an alternative. This is very refreshing and super easy to make. It’s great paired with chips (obvi) but also good as a topping for pork or as a ‘dip’ for crudite. Using fruits and veggies of the deep summer, this recipe is a way to use up some of your bounty in a new and yummy way. I hope you enjoy it!
Ingredients:
2 ears corn, grilled or boiled with kernels cut off
1.5 large peaches, cubed or diced
2, 3” jalapenos, seeded, membranes removed, finely diced
1 small white onion, diced
Zest and juice of 1 lime
1/2 tsp cumin
1/2 tsp salt
1 small pickling cucumber, chopped
1 cup loosely packed herb leaves; I used Italian parsley and mint, chopped
Instructions:
Add all ingredients to a large bowl; toss to combine.
