Refreshing Green Smoothie
It’s Summertime! What’s better when it’s hot outside than something cold and delicious? The refreshing nature and amazing health benefits of this delicious green smoothie are attributed to the HERBS!
Herbs are my new favorite thing. I planted English thyme, spearmint, peppermint, oregano, basil, rosemary and sage this year and I use some combination of these herbs every day! Herbs are fun to use, delicious and have numerous health benefits. Many herbs contribute to healthy digestion and immunity, so why not add herbs to everything?
Herbs are easy to grow too. They work beautifully in a container garden. They thrive when pruned, so plant, cut & eat, and your herbs will reward you with more luxurious growth.
You can use any combination of herbs in a smoothie; I find mint and basil work well together or mint and parsley.
Ingredients
Zest & juice of 1/2 each, lemon and lime
1/2 cup blueberries
8-12 spearmint leaves, washed
4 springs Italian parsley, leaves removed and washed
8 large spinach leaves, pulled off stems and washed
4-6 curly kale leaves, pulled off stems and washed
1 Tbs hemp hearts optional
1 Tbs chia seeds
1/2 cup orange juice
1/2 cup water
2 Tbs honey
1 cup ice cubes
2 in wide round, English cucumber
1 Tbs MCT oil or 1/4 of an avocado optional

Blend all ingredients until smooth. Notes: Add more water to thin to desired consistency. The MCT oil or avocado adds fat for better, longer satiety.
