Spicy Chickpeas and roasted tomatoes
This recipe can be used for a variety of things including a topping for half a sweet potato or spaghetti squash or as a side dish.
Ingredients:
1 14-oz. can chickpeas
1 14-oz. can fire-roasted tomatoes
1/2 tsp. turmeric
1/4 1/2 tsp. cumin
1/8 tsp. cayenne pepper
Dash of cinnamon
Saute chickpeas in a skillet over med. high heat with a tad of Ghee (butter) or butter-flavored olive oil. Let sizzle for 3-5 min. Add the spice and stir to coat. Add the fire-roasted tomatoes and cook 2 min more to heat through.
