citrus roasted carrots
Ingredients:
1 lb mix of yellow and orange carrots, washed and peeled
1 tsp coriander seeds
1/2 tsp ground turmeric
1/4 tsp smoked paprika
Zest of 1 lemon
2 tsp olive oil
1 Tbs orange juice, or juice from 1 lemon
1/2 tsp Kosher salt
8 grinds black pepper
Instructions:
Cut thick carrots in halves or quarters lengthwise, so that they are fairly uniform in size. Cut crosswise to create 4-inch lengths.
Place carrots on a piece of aluminum large enough to accommodate all carrot spears with enough left over to close around the carrots.
Sprinkle remaining ingredients evenly across carrots in aluminum foil.
Close aluminum foil into a packet.
Place aluminum packet on hot grill or in 375-degree oven. Cook undisturbed for 25 min. Remove from heat and let sit 10 min before opening foil packet to serve.
